What it is & how it is made
A strong inorganic acid consisting of hydrogen chloride dissolved in water. As a food additive it is obtained from the reaction of hydrogen with chlorine or as a by product of chlorination processes; the additive grade requires a purity above 99.7 percent.
Where it is used
Used as an acidity regulator and for pH adjustment. Under the EU and Turkish Food Codex lists it is permitted at quantum satis in many categories, including fermented milk products, cheeses, processed fruits and vegetables, meat products, sauces, confectionery, beverages and food supplements.
Health note
EFSA re-evaluated the chlorides in 2019 and identified no safety concern at the reported use levels; the assessment used a reference value of 40 mg chloride per kg body weight per day. Mean intakes remained below this value, while 95th percentile estimates for toddlers, children and adolescents slightly exceeded it.
Halal assessment
Its manufacture is entirely inorganic and synthetic, and no animal input is reported in the process. The carrier or processing aid in the finished product may differ, so consult the manufacturer's halal certificate for a definitive answer.
