- What it is & how it is made
- A mineral salt of calcium and chloride ions. It is produced from natural brines or through reactions of calcium hydroxide and limestone.
- Where it is used
- Used as a firming agent that keeps texture intact in canned vegetables and fruits, as a coagulation aid in cheesemaking, and in beverages. It is permitted at quantum satis in many categories.
- Health note
- EFSA's 2019 chloride assessment identified no safety concern at the reported uses, on the basis of a reference value of 40 mg chloride per kg body weight per day. Mean intakes remained below this value.
- Halal assessment
- Its source is mineral, namely natural brine or limestone, and no animal input is reported in its production. The carrier or processing aid in the finished product may differ, so consult the manufacturer's halal certificate for a definitive answer.
