- What it is & how it is made
- A mineral salt of magnesium and chloride ions. It is obtained from the mother liquors of potassium chloride production or by chlorination of magnesite; the additive grade has a purity above 99 percent.
- Where it is used
- Used as a firming agent and colour retention agent, and also in the coagulation of soy products. It is permitted at quantum satis in many food categories.
- Health note
- EFSA's 2019 chloride assessment identified no safety concern at the reported use levels. The Panel noted that large doses of magnesium ions cause diarrhoea and should be avoided.
- Halal assessment
- Its source is mineral and no animal input is reported in its production. The carrier or processing aid in the finished product may differ, so consult the manufacturer's halal certificate for a definitive answer.
