What it is & how it is made
The sodium salts of sulphuric acid (sodium sulphate and sodium hydrogen sulphate). They are produced by synthetic routes such as the Mannheim and Hargreaves processes or mined from natural deposits.
Where it is used
Used as an acidity regulator, dough conditioner and salt substitute. Under the EU and Turkish Food Codex lists they are permitted at quantum satis in many categories within Group I.
Health note
In its 2019 assessment EFSA concluded that a numerical acceptable daily intake (ADI) was not required for the sulphates and identified no safety concern at the reported uses. The main effect is a laxative effect at high doses, and estimated intakes are far below the level at which this effect was observed.
Halal assessment
Its source is mineral and synthetic, and no animal input is reported in its production. The carrier or processing aid in the finished product may differ, so consult the manufacturer's halal certificate for a definitive answer.
