- What it is & how it is made
- Calcium sulphate is a mineral mined from gypsum deposits.
- Where it is used
- Used as a firming agent, dough conditioner, yeast food and anti caking agent in bread and bakery products, soy products (as a tofu coagulant) and various processed foods. It is permitted at quantum satis in many categories within Group I.
- Health note
- EFSA's 2019 sulphate assessment concluded that a numerical acceptable daily intake (ADI) was not required and identified no safety concern at the reported uses. A laxative effect at high doses is the main effect noted, and no genotoxicity or carcinogenicity concern was identified.
- Halal assessment
- It is obtained directly from mineral (gypsum) deposits and no animal input is reported in its production. The carrier or processing aid in the finished product may differ, so consult the manufacturer's halal certificate for a definitive answer.
