- What it is & how it is made
- Produced synthetically from the reaction of ammonia with sulphuric acid; it can also be obtained as a co-product of synthetic fibre manufacture.
- Where it is used
- Used as a dough conditioner and yeast food. Its use is restricted under EU law: it is permitted only under Annex III (processing aid and carrier type uses), and the Turkish Food Codex follows the same framework.
- Health note
- EFSA's 2019 sulphate assessment concluded that a numerical acceptable daily intake (ADI) was not required and identified no safety concern at the reported uses. A laxative effect at high doses is the main effect noted.
- Halal assessment
- Its manufacture is synthetic, from ammonia and sulphuric acid, and no animal input is reported. The carrier or processing aid in the finished product may differ, so consult the manufacturer's halal certificate for a definitive answer.
