What it is & how it is made
Sodium aluminium phosphate, commonly known as SALP, is a white odourless powder defined in the EU specification in two distinct chemical forms, both required to be at least 95 per cent pure.
Where it is used
It is used as a slow-acting leavening acid. Because it releases most of its gas in the oven, it is favoured in cake mixes, biscuits and frozen doughs.
Health note
This additive contains aluminium. EFSA has set a tolerable weekly intake for aluminium of 1 mg per kilogram of body weight and has reported that this level can be exceeded in some consumer groups. For that reason the use of aluminium-containing additives in the EU is restricted to a limited number of foods with specific maximum levels; it is not covered by the Group I quantum satis allowance.
Halal assessment
This substance is an inorganic mineral compound produced without animal raw materials, so no halal concern has been reported for the additive itself. The product as a whole should still be assessed: carriers or other ingredients in the formulation may be of animal origin.
