- What it is & how it is made
- A flavour enhancer used together with MSG. Commercially it is usually obtained from meat, fish or yeast; its source varies by product.
- Where it is used
- Used together with MSG (E621) in crisps, instant soup, stock cubes and snacks to strengthen its taste.
- Health note
- It is considered safe at ordinary levels; people with gout or high uric acid are advised to be careful because of its purine content.
- Halal assessment
- Because it can frequently be of animal origin (meat or fish) and the source is not stated, it has been left as doubtful. If it is fish-derived or microbially produced and certified, it can be accepted as halal; because of the possibility of a porcine source, a certificate should be sought.
