- What it is & how it is made
- Nitrogen is a colourless, odourless, non-flammable gas making up about four fifths of air. The EU specification requires at least 99 per cent purity and sets limits on water, carbon monoxide and hydrocarbon content.
- Where it is used
- It is used as a packaging gas and propellant. By displacing oxygen inside the pack it delays rancidity in fats and colour deterioration, which is why it is common in crisps, nuts and coffee packaging. It is also used to give some drinks a fuller texture.
- Health note
- It is a natural component of air and is not chemically incorporated into food. Neither JECFA nor the EU assessments considered a numerical daily intake limit necessary, and no health risk has been reported.
- Halal assessment
- It is a gas obtained from air or by synthesis, produced without animal raw materials and not permanently incorporated into the food. No halal concern has been reported.
