- What it is & how it is made
- Nitrous oxide, also known as dinitrogen monoxide, is a colourless, non-flammable gas with a sweetish odour. The EU specification requires at least 99 per cent purity.
- Where it is used
- It is used as a propellant. In pressurised whipped cream it dissolves in the cream and expands on release, increasing volume and creating the foam texture.
- Health note
- The amount consumed with food is very small and no health risk has been reported for that use. Inhaling the pure gas, however, is not a food use and can cause serious harm to the nervous system and to vitamin B12 metabolism.
- Halal assessment
- It is a gas obtained from air or by synthesis, produced without animal raw materials and not permanently incorporated into the food. No halal concern has been reported.
