Turkish Wedding Soup

Ingredients
- 400 g diced lamb
- 2 tbsp flour
- 2 tbsp butter
- 1 egg yolk
- Juice of 1 lemon
- 1.5 litres meat stock
- 1 tsp red pepper flakes
- Salt
Steps
- 1Simmer the lamb in salted water until tender, then strain and keep the stock.
- 2Melt the butter in a pot and cook the flour until it smells nutty.
- 3Add the stock little by little, whisking constantly to avoid lumps.
- 4Whisk the egg yolk with lemon juice, then temper it with a ladle of hot soup.
- 5Pour the tempered mixture back in, add the meat and simmer gently for 5 minutes.
- 6Heat the pepper flakes in melted butter in a separate pan and drizzle over the soup.
