Rasam (South Indian Tamarind Soup)

Ingredients
- 3 tomatoes
- A walnut-sized piece of tamarind
- 4 cups water
- 2 garlic cloves
- 1 green chilli
- 1 tsp cumin
- 1 tsp black pepper
- Half a tsp turmeric
- 10 curry leaves
- 1 tsp mustard seeds
- 2 tbsp vegetable oil
- Fresh coriander, salt
Steps
- 1Soak the tamarind in hot water for 15 minutes and strain the liquid.
- 2Coarsely crush the cumin, black pepper and garlic in a mortar.
- 3Crush the tomatoes and simmer them with the tamarind water, water, turmeric and salt for 10 minutes.
- 4Add the crushed spice mix and cook for 5 more minutes without letting it boil hard.
- 5In a separate pan, pop the mustard seeds, curry leaves and chilli in oil and pour into the soup.
- 6Scatter with coriander and serve hot.
